The 7th and final opponent in hard tournaments is substantially harder than the others. The key is to not miss any powerups, while (of course) not missing any balls. Some guides recommend avoiding powerups and focussing on hitting the ball rather than risk going for a powerup and missing the ball but I personally disagree as in these matches the computer often goes for (and gets) powerups consistently and with deadly efficiency, and a well timed freeze or power shot means night night for you. Remember that the powerups will stay available for 3 hits, up to 4 if they spawn right after you hit the ball.
