300 - 350 g. aubergine cuted into cubes and salt, leave for 15 minutes, wash off the salt and fry in olive oil until golden. In another frying pan chop 1 onion and fry in olive oil, add 200 g tomatoes in their own juice to the onion, simmer for 7 minutes. Mix ready-made aubergine and tomatoes , add basil and "penne" pasta boiled before in salted water for about 10 minutes ( at the rate of 70 g per 1 person).
